Uzbek Chak-Chak
Chak chat is a traditional sweet treat made from fried dough and coated in honey syrup.It’s crunchy on the outside, soft inside, and often served during celebrations.
Ingredients:
For the Dough:
4 eggs
½ tsp salt
½ tsp baking soda
2 cups all-purpose flour (plus extra for rolling)
Vegetable oil (for deep frying)
For the Syrup:
50g honey
1½ cups sugar
1 cup water
1 tbsp lemon juice
Instructions:
Step 1: Prepare the Dough
Crack 4 eggs into a mixing bowl.
Add ½ tsp salt and ½ tsp baking soda, then whisk everything together until well combined.
Gradually add 2 cups of flour, mixing to form a rough dough.
Knead the dough on a floured surface until smooth and elastic (about 5-7 minutes).
Cover the dough and let it rest for 20 minutes at room temperature.
Step 2: Shape the Dough
Lightly dust a surface with flour and roll out the dough to an even thickness.
For half of the rolled-out dough, spread a small amount of oil over the surface.
Fold the dough in half and use a sharp knife to cut it into 1 cm × 2.5 cm strips.
Step 3: Deep Fry the Dough
Heat a deep pan with vegetable oil to 170-180°C (340-360°F).
Drop the cut dough pieces into the hot oil in small batches.
Stir occasionally and fry until golden brown and crispy.
Remove with a slotted spoon and drain on a paper towel.
Step 4: Prepare the Syrup
In a saucepan, combine 50g honey, 1½ cups sugar, 1 cup water, and 1 tbsp lemon juice.
Bring to a boil over high heat, stirring until the sugar dissolves.
Reduce to low heat and let it simmer for 5 minutes until slightly thickened.
Step 5: Assemble the Chak-Chak
Quickly pour the warm syrup over the fried dough and mix immediately to coat evenly.
Transfer the mixture to a baking tray and press gently to shape it into an even layer.
Let it cool completely before cutting into pieces.
Serving Tip:
Garnish with chopped nuts (walnuts, pistachios, or almonds) if desired.
